Pizza, pastas and breads have become a major part of the American diet... and they are just as unhealthy as they are delicious.
For spaghetti-lovers, we have a recipe that will help you stay on track with your healthy eating and reduce your cravings for the carb-filled Italian alternative.
The noodles in this recipe are actually spiral-cut zucchini. We initially had our doubts about how close the taste would be to "real spaghetti", but the zucchini is a near-perfect substitute.
If you don't want to have to cut the zucchini noodles by hand, consider picking up a spiral cutter from Bed Bath and Beyond or Amazon... they are definitely worth the investment:
Gefu Spirelli Cutter ($30)
2 zucchinis peeled
1 Tablespoon Olive Oil
¼ Cup of Water
Salt and Ground Pepper to taste
Cut lengthwise slices from zucchini using a vegetable peeler, stopping when the seeds are reached. Turn zucchini over and continue 'peeling' until all the zucchini is in long strips; discard seeds. Slice the zucchini into thinner strips resembling spaghetti.
Heat olive oil in a skillet over medium heat; cook and stir zucchini in the hot oil for 1 minute. Add water and cook until zucchini is softened, 5 to 7 minutes. Season with salt and pepper.

PS - for the spaghetti sauce, we try to stick to sauces with natural ingredients, gluten-free (if possible) and minimal sugar content.
